I have tried two examples of this software to create Windows XP, Ubuntu and Windows Vista machines. Both worked equally well. In the end I went with VMWare Fusion as you get an educational discount and I found the interface slightly easier to use.
Another program that lets you run Windows applications on Mac OS X without the need of a virtual machine, is CrossOver, (http://www.codeweavers.com/products/). Again educational discounts are available.
